Favorite Fall Salad

Now that I’ve officially eaten all of my kids’ leftover Halloween candy, I’m looking to add a heaping dose of healthy food back into my fall recipe rotation. This salad using Bowery lettuce is one of my favorites. Bowery grows all of it’s produce inside in a vertical garden and as a result, is 100x more productive than traditional agricultural practices and you can eat your greens without washing because they are just that clean!


1 Package Bowery Butter Lettuce
1 Head radicchio
1 Apple
2 Tbsp Feta Cheese
2 Tbsp Marcona Almonds
1 Pomegranate

For the dressing: 

3/4 Cup Apple Cider
2 Tbsp. Apple Cider Vinegar
2 Tsp. Dijon Mustard
1 Shallot


Arrange the Bowery butter lettuce and torn radicchio leaves on a platter. Thinly slice your apple and scatter on the plate with pomegranate seeds. Top with crumbled feta and chopped Marcona almonds. If you don’t like pomegranate, you could also use persimmons for an equally nice flavor combination!

For the dressing:

Bring the apple cider and apple cider vinegar to a boil with 1 Tbsp chopped shallots. Whisk in 2 tsp. dijon mustard and season with salt and pepper to taste.
